An ovo-vegetarian egg drop soup made with vegetable broth.

Recipe Ingredients for Vegetarian Egg Drop Soup

2 large Egg, Whole
2 large Egg, White
6 cup Organic Vegetable Broth
1 cup Peas, Green
1 cup Corn, Sweet, Yellow
0.5 large Onions
3 medium (4-1/8" long) Onions, Spring Or Scallions
1 cup Coriander Leaves
1 tsp Pepper, Black
1 tsp Corn Starch
1 medium Carrots

Recipe Directions for Vegetarian Egg Drop Soup

  1. Prepare vegetables -- chop onions as per preference, chop green onions into little rings, carrots in a small dice. Frozen corn, peas are fine. You could use a frozen vegetable mix of those too if you wanted.

  2. Mix cold vegetable broth & cornstarch until the corn starch is no longer visible.

  3. Add liquid to a pot, along with any seasonings desired, and turn up heat to bring to a boil.

  4. While broth is heating, beat egg whites & eggs thoroughly in a bowl until well-mixed.

  5. When broth comes to a boil, add pea, corn, onions, and carrots. Save green onions & cilantro for later.

  6. Reduce broth to a low simmer. Gently stirring liquid in a circle using a spoon, gradually add eggs little bit by little bit while constantly gently stirring to get the desired ribbon-like texture for the egg. When all egg has been added and becomes slightly opaque, turn off heat.

  7. Add chopped green onions and cilantro leaves, stir.

  8. Serve hot!
