Hearty red bean, vegetable and tomato soup

Recipe Ingredients for Vegetarian Chowder

2 leeks, washed and sliced finely
2 onions, diced
2 carrots, diced
2 stalks celery, dicked
5 cloves garlic, finely chopped
2 tbsp olive oil
2 cups tomato juice
8 oz salsa
2 cups cooked garbanzo beans
2 cups cooked kidney beans
1/2 pound green beans, topped and tailed, and halved
1/2 head cabbage, finely diced
1 cup finely chopped parsley
1 tbsp chili powder
2 tsp basil
2 tsp oregano

Recipe Directions for Vegetarian Chowder

  1. Heat olive oil in a very large soup pot.

  2. Add first five ingredients, and cook, stirring occasionally for 10 minutes.

  3. Add thoroughly drained and rinsed beans, tomato juice, salsa, herbs and water to cover. Bring to a boil, then lower the heat and simmer to mix flavours.

  4. After the soup has cooked for half an hour or so, blend with a hand blender to break down the chunks and thicken the soup.

  5. Add cabbage and green beans, bring soup back to a boil, and cook for another 10 minutes. Salt and pepper to taste.

  6. Just before serving, mix in the parsley. Serve with grated cheese to taste.
