Moist chocolate cake, no egg, milk, butter

Recipe Ingredients for Vegetarian Chocolate Cake

2 1/4 cups flour
4 1/2 tbs. cocoa powder
1 1/2 cups sugar
1/2 cup vegetable oil
1 1/2 tsp. baking soda
1 1/2 tbs. white vinegar
1 1/2 tsp. vanilla extract
1 1/2 cups cold water

Recipe Directions for Vegetarian Chocolate Cake

  1. Lightly oil a 9x13 inch nonstick baking pan

  2. Combine & mix dry ingredients

  3. Add wet ingredients & stir quickly until smooth

  4. Bake 25-30 minutes at 350

  5. Optional: Mint/Chocolate icing

  6. 12 oz dairy free choc. chips, 1/4 cup soy/rice milk

  7. 1 tbs. peppermint extract

  8. Melt chips in saucepan over very low heat

  9. Add milk & peppermind

  10. Stir continuously, adding more milk/extract to desired consistency and taste

  11. Let cool before frosting cake
