Vegetarian Chili Soup Recipe

This is a really great winter soup; it tastes just like chili, just without the meat/thick consistency. The coconut milk makes it taste sort of like there's a little dollop of sour cream. Warning: May be spicy to those you don't like spicy food... if you want a milder soup, add less chili or don't use jalapenos.

Recipe Ingredients for Vegetarian Chili Soup

2 large tomatoes
1 cup onion
1 red pepper
1/2 tablespoon jalapeno
1 1/4 cups Tomato Sauce
1 cup lite coconut milk
2 cups water
1 tablespoon minced garlic
1 tablespoon chili powder
1 tablespoon olive oil
1/2 tsp salt
1/2 tsp cumin

Recipe Directions for Vegetarian Chili Soup

  1. Dice one of the tomatoes and cook covered over a stove top until very watery. About medium heat.

  2. Slice the pepper and the onion and sauté with the olive oil and the diced jalapeno.

  3. Put the cooked tomatoes, pepper, and onion into a large pot with the rest of the ingredients. Cook covered on medium-low heat for about 15-20 minutes.
