Great comfort food that is actually pretty healthy. Make it even healthier by buying reduced sodium versions of the canned goods. Feel free to substitute whatever you have in your cupboard (black beans, pinto beans, kidney beans, different types of tomatoes, etc.).

Recipe Ingredients for Vegetarian Chili

3/4 vidalia onion, diced
2 sweet yellow peppers, diced
1 cup fresh mushrooms, sliced
1 can (15.5 oz.) beans, kidney, dark red
15 oz. ) chili beans
15 oz. ) garbanzo beans
28 oz. can organic tomatoes, diced
12 oz. Low Sodium V8 100% Vegetable Juice
4 tbsp cayenne pepper
2 tbsp ground cumin
4 tbsp. cilantro, chopped
2 jalapeno peppers

Recipe Directions for Vegetarian Chili

  1. Mix all ingredients except cilantro and heat until beans are tender, approximately 20 minutes. Add fresh cilantro and cook for 5 additional minutes.

  2. I like my chili on the spicy side, so feel free to scale back on the spices, too. Yum! Serve with a dollop of fat free sour cream if you like.
