Great hearty vegetarian dish. Add to brown rice, quinoa, or another grain to make a full meal.

Recipe Ingredients for Vegetarian Chili

1 3/4 cups kidney beans
28 oz can diced tomatoes
2 cups zucchini, chopped
1 medium onion
1 cup mushrooms, chopped
1 cup red bell pepper, chopped
1 tbsp chili powder
1 tbsp tomato paste
1/8 tsp salt
1/4 tsp pepper
1 tbsp olive oil

Recipe Directions for Vegetarian Chili

  1. Warm olive oil over medium heat in a large pot. Saute chopped onions until almost translucent. Add minced garlic and saute 30 seconds more.

  2. Add chopped zucchini, mushrooms, and red bell pepper, sauteing until softened, about 5 minutes.

  3. Stir in tomato paste, diced tomatoes, and beans. Bring to a boil and reduce heat to medium low.

  4. Add chili powder and simmer a few minutes to let flavors blend.

  5. Add salt and pepper to taste.
