Recipe Ingredients for Vegetarian Chili

1 cup yellow onion, chopped
2 peppers, green, chopped
1 cup celery,chopped
2 carrots, chopped
6 cloves garlic, chopped
1 tsp thyme
1 tsp basil
1 tsp cumin
2 tbs chili powder
1/2 tsp red pepper flakes
14 oz beans, kidney, red
28 oz tomatoes, diced, canned
1 tsp salt
1/2 tsp black pepper
56 g Barley Malt

Recipe Directions for Vegetarian Chili

  1. Put onions, green peppers, carrots, celery, garlic, cumin, thyme, and basil (fresh herbs would go in much later), the salt and pepper, and half the chili powder in a great big pot.

  2. Sautee gently until the onions are transparent.

  3. Add the beans, tomatoes and bay leaf.

  4. Simmer for half an hour, stirring occasionally.

  5. Then add the molasses and the red pepper flakes. Simmer another half hour.

  6. Add the rest of the chili powder.

  7. Simmer another half hour until all the flavours blend in and everything is delightfully mushy.
