A slightly spicy, very easy, meatless chili.

Recipe Ingredients for Vegetarian Chili

1 medium onion
2 cloves garlic, crushed
28 oz can diced tomatoes
15 1/2 oz pinto beans
15 oz can chickpeas
11 oz can corn
1 1/2 tablespoons chili powder
1 1/2 tablespoons cumin
1/4 t. salt
1/8 t. cayenne

Recipe Directions for Vegetarian Chili

  1. Sautee onion, pepper, celery, and garlic until tender.

  2. Add remaining ingredients, bring to a boil. Reduce heat to medium; cover and cook 20-30 minutes.

  3. Garnish with avocado and shredded cheddar, if desired.
