Vegetarian Chili made with black beans.

Recipe Ingredients for Vegetarian Chili

1 medium (2-1/2" dia) Onions
4 clove Garlic
1 tbsp Olive Oil
2 medium Carrots
2 Medium Tomatoes
2 serving Black Beans
1 tbsp Parsley
1/4 tsp Spices Cayenne Pepper

Recipe Directions for Vegetarian Chili

  1. 1. Saute the onions and garlic in oil in a large sauce pan.

  2. 2. Add carrots, tomatoes, herbs, spices, and beans.

  3. 3. Cover (to retain moisture) and cook on medium heat for 15-20 minutes, or until the carrots are tender.

  4. Serves 6.
