A colorful, healthy and easy-to-make vegetarian chili

Recipe Ingredients for Vegetarian Chili

2 bell peppers
1 medium onion
3 cloves garlic
1 T olive oil
28 oz stewed tomatoes
14 oz kidney beans
10 oz corn
1 1/4 cups water
2 T chili powder
1 1/2 t cumin
1 cilantro, to taste
1 salt, to taste
1 pepper, to taste

Recipe Directions for Vegetarian Chili

  1. Sautee the bell peppers, onion and garlic in olive oil.

  2. Add the remaining ingredients and bring to a boil. Reduce heat.

  3. Simmer for 30 minutes to 1 hour.
