From The Pump Energy Food restaurants in New York City. Recipe from their cookbook, written by Steve and Elena Kapelonis. BEWARE! HOT! Alter seasonings to taste if you do not like your chili hot. For a hearty meal, pour over brown rice.

Recipe Ingredients for Vegetarian Chili

8 tomatoes (red plum, about 2 1/4 pounds, seeded and diced)
4 celery stalks (diced)
5 carrots (peeled and diced)
3 large onions (diced)
2 medium-sized green bell peppers (diced)
3 1/2 c water
2 c tomato sauce
1 c red beans (cooked)
1 c white kidney beans (cooked)
1 c black beans (cooked)
3 tbs chili powder
2 tsp coriander seeds
2 tsp cumin
2 tsp paprika
1/2 tsp freshly ground black pepper
1/4 tsp cayenne pepper

Recipe Directions for Vegetarian Chili

  1. In large, heavy pot, cook the tomatoes, celery, carrots, onions, peppers, 3 bay leaves, and 1 cup of the water over low heat, covered for about 20 minutes or until they begin to soften, stirring to keep from sticking.

  2. Add the remaining 2 1/2 cups of water and bring to a boil over medium-high heat. Reduce the heat to medium and simmer for 20 minutes or until the vegetables are soft, stirring often.

  3. Put the tomato sauce, beans, chili powder, coriander seeds, cumin, paprika, and pepper in the pot and stir well. Cook over medium-low heat for about 1 hour and 15 minutes to give the flavors time to develop and until thickened.

  4. Serve immediately. Makes 6 servings of 1 1/3 cup each.
