Recipe Ingredients for Vegetarian Chili

1 tablespoon canola oil
160 g (1 cup chopped) onion
149 g (1 cup chopped) green pepper
4 cloves garlic, finely chopped
2 jalapeņo or serrano peppers, seeded, finely chopped
30 oz (canned) black beans, drained, rinsed (16315)
29 oz (fire roasted or plain) diced tomatoes (82687), undrained
1 1/2 cups water
1 tablespoon chili powder
1 teaspoon ground cumin
1 cup frozen sweet corn (132362)

Recipe Directions for Vegetarian Chili

  1. In 4-quart saucepan, heat oil over medium heat. Add onion, bell pepper, garlic and chiles; cook 5 to 7 minutes, stirring frequently, until tender.

  2. Stir in black beans, tomatoes, water, chili powder, cumin and salt. Heat to boiling. Reduce heat; cover and simmer 30 minutes, stirring occasionally. Stir in corn. Heat to boiling. Reduce heat; simmer uncovered 5 minutes longer.

  3. Top each serving with optional sour cream or plain yogurt, shredded Cheddar cheese and/or fresh cilantro.
