Great winter comfort food, full of veggies.

Recipe Ingredients for Vegetarian Chili

15 oz petite diced tomatoes
1 1/2 cups cannellini beans
1 medium potato
1 small onion, chopped
1 clove garlic, minced
1 cup chopped zucchini
1 cup chopped mushroom
1 cup chopped red bell pepper
1 tsp chili powder
1 tbsp olive oil

Recipe Directions for Vegetarian Chili

  1. In a big pot over medium heat, warm the olive oil. Add garlic and onion and stir occasionally until garlic is lightly browned and onion is translucent.

  2. Add in potato, zucchini, mushroom, and red bell pepper and saute until almost cooked through.

  3. Add in tomatoes, beans, and chili powder and bring to a simmer and let cook until flavors combine and mixture is heated through, about 10-15 minutes.

  4. *Add light mexican or mozzarella cheese and some brown rice or quinoa if you would like! (This will alter calorie content)
