Recipe Ingredients for Vegetarian Chili

1 tbsp. safflower oil
1 onion
1 carrot
1 stalk celery
1 red pepper
3 cloves garlic
28 oz. chopped tomato
14 oz. kidney beans
14 oz. pinto beans
2/3 cup bulgur
1 tbsp. chili powder
2 tbsp. cumin
2 tbsp. smoked paprika

Recipe Directions for Vegetarian Chili

  1. Dice and saute carrot, celery, onion, pepper, and garlic.

  2. Add spices

  3. Add tomatoes and bulgur

  4. Cook ten minutes over low heat and add beans.

  5. Heat 10 more minutes

  6. Season to taste
