A quick, easy, vegetarian chili recipe. For a less watery chili, omit tomato soup. Really, anything can be added to this!

Recipe Ingredients for Vegetarian Chili

1 tbsp olive oil
1/2 cup red onion, chopped
1/2 cup carrots, chopped
1 cup red bell pepper, chopped
2 tsp chili powder
14 1/2 ounce tomatoes, peeled, diced
1 cup condensed tomato soup
15 1/2 ounce kidney beans, drained
1 cup whole kernel corn, drained
1/2 cup unsalted cashews
1/2 tsp ground cumin
1 1/2 tsp dried oregano
1 1/2 tsp dried basil

Recipe Directions for Vegetarian Chili

  1. Heat oil in a large saucepan over medium heat. Saute onions and carrots until tender. Stir in green pepper, cashews, and chili powder. Cook until vegetables are tender, about 6 minutes.

  2. Stir in tomatoes, kidney beans, tomato soup, and corn. Season with cumin, oregano, and basil. Bring to a boil, and reduce heat to medium. Cover, and simmer for 20 minutes, stirring occasionally.
