Recipe Ingredients for Vegetarian Chili

2 tablespoons vegetable oil
1 large onion
4 garlic cloves
3 tablespoons chili powder
1 green pepper
1 red pepper
1 zucchini
1 yellow squash
1/2 teaspoon dried oregano
1/4 teaspoon ground red pepper (cayenne)
14 1/2 ounces stewed tomatoes
11 ounces corn kernels
1/4 teaspoon salt
12 ounces tofu

Recipe Directions for Vegetarian Chili

  1. Heat oil in 4-quart pot over medium heat. Add diced onion, crushed garlic and chili powder; saute for 5 minutes.

  2. Add diced and seeded green and red peppers; saute 5 minutes.

  3. Add zucchini, squash, oregano and ground red pepper; saute for 5 minutes.

  4. Add tomatoes; cook 10 minutes. Stir in corn and salt; cook for 5 minutes.

  5. Accompaniments, optional: cooked rice, sour cream and shredded

  6. cheddar cheese.
