Makes 12 one cup servings. Has crumbled Boca Burgers for that meaty "mouth feel". Serve with brown rice.

Recipe Ingredients for Vegetarian Chili

1 lb kidney beans
2 medium onion
2 cloves garlic
2 stalks celery
2 medium carrots
2 medium bell pepper
28 oz tomatoes
200 g boca burger
1/2 tsp cumin
1/2 tsp oregano
2 tbsp chili powder
28 oz vegetable broth
1 salt and pepper

Recipe Directions for Vegetarian Chili

Soak the beans overnight, or use quick method. Simmer beans in enough water to cover for 1 1/2 to 2 hours with lid tilted. Steam sautee the chopped vegetable in 1/2 cup vegetable broth until tender. Add cooked beans, canned tomatoes, spices and remaining vegetable broth. Simmer for 30 minutes. Adjust seasonings to taste.
