Vegetable Chili made with Soya mince or not! Which ever you prefer. If using Soya Mince I use 130 grams so you need to add the calorie count for 16 grams of Soya Mince to each serving.

Recipe Ingredients for Vegetarian Chili

203 grams Zucchini
307 grams Red Pepper
328 grams Green Pepper
86 grams Celery
19 grams Onion
190 grams Mushroom
443 grams Red Kidney Beans
15 grams Olive Oil
22 grams Stock Cube
7 grams Garlic
1 gram dried herbs
1 gram paprika
2 tablespoons tomato puree
2 tablespoons Worcestershire Sauce
820 grams tinned tomatoes

Recipe Directions for Vegetarian Chili

  1. Chop all vegetables add to huge pan, with oil, thinly sliced garlic, stock cubes, Worcestershire sauce, and a little water cook until beginning to soften.

  2. Add the herbs and paprika plus a pinch of dried chilli, stir, add the kidney beans and the canned tomatoes, squidging the tomatoes as you add them.

  3. Stir and bring to boil

  4. Add the soaked Soya mince (if using) reduce to a simmer and cook for at least half and hour

  5. Leave to stand over night then spoon required amount into a pan, reheat reducing the liquid before serving.

  6. Serve with your choice of jacket potato, Rice or Pasta.
