Fast and Easy Veggie Chili (receives a health grade of 'A')

Recipe Ingredients for Vegetarian Chili

1/4 cup canola oil
1 onion (chopped)
3 tbsp chili powder
1 1/2 tbsp italian seasoning
1 tbsp coriander
3 cloves garlic (chopped)
84 oz canned tomato (chopped/diced/or puree)
32 ounces chili beans (do not drain)
31 ounces kidney beans (rinsed and drained)

Recipe Directions for Vegetarian Chili

  1. Heat oil, add chopped onion, chopped garlic, chopped red bell pepper, and seasonings; heat until veggies are soft. Add canned tomatoes (do not drain) and continue cooking, uncovered, for about 5 to 10 minutes. Add beans, cover and cook until done heated through (about 20 - 30 minutes).

  2. Top with cheese, sour cream, plain yogurt, more onion...whatever suits you!
