Recipe Ingredients for Vegetarian Chili

1 T canola oil
3 cloves garlic, minced
1 1/2 c onion, chopped
3/4 c red bell pepper, chopped
1 jalapeno pepper, chopped
2 T chili powder
1 t cumin
1/2 t oregano
1/2 t black pepper
1/4 t salt
15 oz kidney beans
14 1/2 oz diced tomatoes
14 oz vegetable broth

Recipe Directions for Vegetarian Chili

  1. heat canola oil over medium-high heat and cook garlic for two minutes

  2. Add next nine ingredients and cook for about 5 minutes till vegetables are tender

  3. add kidney beans (I used pinto beans), tomatoes and broth

  4. reduce heat, cover and simmer for 30 minutes (or more...)
