Recipe Ingredients for Vegetarian Chili

1 lb dried red beans
2 ounces chili seasoning mix
4 oz chopped carrots
1/2 cup chopped onion
1 clove garlic, chopped
2 tablespoons olive oil
1 1/2 cups morning star crumbles
29 ounces diced tomatoes

Recipe Directions for Vegetarian Chili

  1. Soak beans overnight. About 3-4 hours before you wish to serve the chili:

  2. Saute onion and garlic in olive oil.

  3. Drain and add soaked beans to pot.

  4. Add 1.5 quarts water

  5. Chope and add carrots

  6. Bring to a boil, then lower to simmer. Simmer for 2.5 -3.5 hours, until beans are tender.

  7. Add tomatos (can be less or more to your taste), seasoning mix (one and a half packages of McCormicks original chili seasoning), and morning star crumbles. Simmer for about 10 minutes.
