Super low in fat and calories. High in fiber and protein. Also excellent when served over sweet baked potatoes! Sprinkle with a little cheese or nutritional yeast.

Recipe Ingredients for Vegetarian Chili

28 oz canned tomatoes
3 cups Beans, Pink, Mature Seeds
1 med onion
2 clove garlic
1 med green pepper
1 cup corn
1 tsp olive oil

Recipe Directions for Vegetarian Chili

  1. Chop onion, clove, and green pepper. You can also use fresh jalapeno, serranos, etc as you prefer.

  2. Saute onion, clove, and green pepper in oil. Add beans, tomatoes, and corn.

  3. Season with a good tablespoon or two of chili powder. You can also season with dried peppers, cumin, coriander, etc. Experiment to find your perfect blend.

  4. Bring to a boil, the reduce heat and simmer (uncovered) until thick, at least 30 minutes.

  5. Can also be prepared by tossing all ingredients in a crock-pot and cooking on low for 6-8 hours.
