Healthy, fulfulling vegetarian chili. Makes 4 big servings or 5 smaller portions.

Recipe Ingredients for Vegetarian Chili

15 oz red kidney beans
1 tbsp olive oil
2 medium carrots, chopped
3 large tomatoes, chopped
2 garlic cloves, minced
2 small red bell peppers, chopped
1 tsp cayenne
1 tsp salt
1 tsp pepper
1 small onion, chopped

Recipe Directions for Vegetarian Chili

  1. Heat oil in deep pan over high heat. Add the chopped onion, the carrots, the red bell pepper and the garlic. Sauted for about 10 minutes.

  2. Add the chopped tomatoes and the red kidney beans. Add the cayenne, salt, pepper. I also add some chili powder and hot sauce along with dried origan and basil.

  3. Reduce heat and let simmer for 2-3 hours.
