Vegetarian Chili Recipe

Makes 6 servings



You can substitute a jalapeno for the chili pepper. Amount of any one ingredient can be altered to fit your taste.

Recipe Ingredients for Vegetarian Chili

28 ounce tomatoes, diced
8 ounce tomato paste
14 1/2 ounce kidney beans or black beans
4 red bell peppers, chopped
1 chili pepper, chopped
1 red onion, diced
2 cloves garlic, minced
2 zucchini, chopped
1 tbs cumin
1 tsp chili powder

Recipe Directions for Vegetarian Chili

Chop all the veggies, season with salt if desired to bring out the flavor. Saute in a little bit of extra virgin olive oil then add the tomatoes. Simmer for 20 minutes. Then add beans. Cook for 10-15 more minutes.
