Tasty, spicy, and colorful, its good on a cold day. Serve with cornbread, tortillas or homemade biscuits. You can make it stretch to 8 servings by putting over brown rice or quinoa.

Recipe Ingredients for Vegetarian Chili

1 c. black beans
1/2 small onion
1/2 red bell pepper
1 cup butternut squash, diced
1 cup frozen corn
2 cups tomatoes, chopped
3 cloves garlic, minced
4 jalapeno peppers, chopped
1 tablespoon chili powder
1 teaspoon cumin

Recipe Directions for Vegetarian Chili

Add all ingredients to crock pot, stir well. No need for extra water because the veggies will cook down and release their water. Cook on low about 6 hours.
