A really good mix, but super high in calories so eat a little!

Recipe Ingredients for Vegetarian Chili

1 tablespoon olive oil
4 medium zucchinis, cut into bite-sized chunks
1 medium onion, cut into bite-sized chunks
2 green peppers, cut into bite-sized chunks
1 red pepper, cut into bite-sized chunks
4 cloves garlic, chopped
56 ounce of diced tomatoes
32 ounce of kidney beans, rinsed and drained
16 ounce of garbanzo beans (chick peas), rinsed and drained
16 ounce of black beans, rinsed and drained
2 teaspoons chili powder (more if you want more heat)
2 teaspoons cumin
1 teaspoon fennel seeds
1 teaspoon pepper
1 teaspoon salt
1 teaspoon dried dill
1 teaspoon basil
1 teaspoon oregano
1/4 cup fresh parsley
1/4 cup fresh cilantro
2 teaspoons fresh lemon juice

Recipe Directions for Vegetarian Chili

  1. Heat up large pot. Add olive oil. Add the veggies and garlic. Stir occasionally until zucchini is slightly tender and onion is starting to become translucent. Add tomatoes, beans, and all the rest. Cook over medium heat, uncovered, for at least one hour. Can cook longer for thicker chili.

  5. Tortilla Chips

  6. Shredded Cheese

  7. Sour Cream

  8. Sliced Green Onion

  9. Chopped Cilantro

  10. Fresh Chopped Tomatoes
