Adapted from the "Havana Moon Chili" recipe from Epicurious to make the dish less caloric and vegetarian.

Recipe Ingredients for Vegetarian Chili

2 tablespoons olive oil
1 onion
3 garlic cloves
15 ounces chicken broth
800 grams tomatoes
300 grams corn
250 grams kidney beans
2 large carrots
2 tablespoons balsamic vinegar
2 tablespoons curry
1 tablespoon cinnamon
1/2 teaspoon salt

Recipe Directions for Vegetarian Chili

  1. Cook onions and garlic in the olive oil until soft, several minutes.

  2. Combine with broth, tomatoes, chopped carrots, corn, beans, spices, salt, and vinegar.

  3. Bring to a boil; reduce heat and cook for 30 minutes, partially covered. After 30 minutes, remove cover and cook for an additional 30 minutes.
