This is my basic veggie chili recipe.

Recipe Ingredients for Vegetarian Chili

1 large onion, chopped
3 cloves garlic, minced
2 tablespoons olive oil
1 tablespoon chili powder
1 1/2 teaspoons ground cumin
1 teaspoon ground cinnamon
1/4 teaspoon red pepper
1 beans, pinto (15 ounce can), rinsed and drained
1 beans, black (15 ounce can), rinsed and drained
1 beans, kidney (15 ounce can), rinsed and drained
1 tomatoes (14.5 ounce can), diced with juice
2 cups water
1 cup dry red wine
1 1/2 teaspoons dried oregano leaves
1 teaspoon salt
1 large bell pepper
1 tablespoon fresh lime juice

Recipe Directions for Vegetarian Chili

  1. Saute onion and garlic in oil over medium heat until soft, about 5 minutes

  2. Add all spices but oregeno, stirring constantly about one minute

  3. Add beans, tomatoes (including juice), water, wine, oregeno, and salt; stir

  4. Simmer uncovered over medium low heat, stirring occassionally, until thick, about 1 hour

  5. Stir in bell peppers, simmer 10 minutes

  6. Remove from heat, stir in lime juice

  7. Serve and top with garnish of choice.
