Makes 8 servings



A nice twist on the original Makes 8 to 9 1 cup (plus) servings. Serve with sour cream & shredded cheese and tortillas.

Recipe Ingredients for Vegetarian Chili

1 cup dry black beans
1 cup dry red beans
1 medium onion, chopped
1 medium zucchini, diced
2 bell peppers, diced
2 carrots, diced
3 cloves garlic, minced
1 cup Certified Organic Vegetable Broth
750 g Strained Tomatoes
7 oz diced green chiles
2 tbsp chili powder
1 tbsp cumin
1/2 tsp black pepper
1 tsp Sodium-Free Salt

Recipe Directions for Vegetarian Chili

  1. soak beans overnight, rinse, then cook in water for approx. 50 minutes. Let cool.

  2. sautee onion, garlic, peppers, zucchini, carrots

  3. add tomatoes, beans, seasonings, green chilis

  4. Simmer for an hour or more until all vegetables and beans are tender.
