Recipe Ingredients for Vegetarian Chili

2 tbs canola oil
4 garlic cloves
1 yellow onion, large whole
2 green bell peppers, 3?? large
1 cup carrots, chopped
12 oz baby corn, gold and white frozen
2 squash, medium with skin
2 zucchini, medium with skin
2 japaleno chile peppers, whole
16 oz fire roasted, crushed canned tomatoes
6 oz tomato paste
15 oz black beans, canned
30 oz dark red and kidney beans, canned
1 cup vegetable broth
4 tbs Chili Powder
2 tbs cumin seeds, ground
1 tbs black pepper, ground
2 tbs bay leaf, dried crumbled
2 tbs oregano, ground
2 Chipotle Peppers

Recipe Directions for Vegetarian Chili

  1. In a large heavy pot, heat the oil over medium high heat. Add onions, garlic, and carrots; saute until translucent.

  2. Add all peppers (except the chilpotle), zucchini and corn; saute for five minutes, stirring occasionally.

  3. Add tomato paste, chopped tomatoes and tomato juice. Then add all salt, pepper, herbs and spices.

  4. Stir well. Add two chopped chilpotle peppers and beans. Stir well.

  5. Add beer and vegetable stock until liquid covers all ingredients in the pot.

  6. Bring to a boil, then reduce heat to medium low. Simmer for a half hour, stirring occasionally.

  7. Remove from heat, and adjust seasonings to taste.

  8. Serve with shredded cheddar, chopped avocado and fresh lime juice. No cilantro!

  9. Note: Tastiest on the second day. Also goes well with poached eggs for brunch.
