vegetarian chili. the original recipe calls for corn instread of zucchini, but I prefer the zucchini. Also, I prefer to drain the beans and add a cup of vegetable stock as well.

Recipe Ingredients for vegetarian chili

1 tbsp Vegetable Oil, Canola
1 pepper Peppers, Jalapeno
3 clove Garlic
1 cup, chopped Onions
1 cup, chopped Carrots
1 cup, chopped Peppers, Sweet, Green
1 cup, chopped Peppers, Sweet, Red
1.5 cup, pieces or slices Mushrooms
2 tbsp Chili Powder
28 oz Tomatoes Whole Peeled
15 oz Black Beans
15 oz Beans, Kidney, Red, Mature Seeds, Canned
15 oz Beans, Pinto, Mature Seeds, Canned
1 medium Squash, Summer, Zucchini, Includes Skin
1.5 tablespoon Oregano
3 tsp Cumin
1 tbsp Basil, Fresh
0.5 tbsp Garlic Powder
1.5 cup Vegetable Stock

Recipe Directions for vegetarian chili

  1. 1.Heat the oil in a large pot over medium heat. Cook and stir the garlic, onion, and carrots in the pot until tender. Mix in the green bell pepper and red bell pepper. Season with chili powder. Continue cooking 5 minutes, or until peppers are tender.

  2. 2.Mix the mushrooms into the pot. Stir in the tomatoes with liquid, black beans with liquid, kidney beans with liquid, pinto beans with liquid, and zucchini. Season with cumin, oregano, basil, and garlic powder. Bring to a boil. Reduce heat to medium, cover, and cook 60 minutes, stirring occasionally.
