A delicious, thick, rich vegetarian chili

Recipe Ingredients for Vegetarian Chili

1/3 cup oil
2 cups sliced mushrooms
1 medium finely chopped onion
1 cup chopped carrots
1/2 diced bell pepper
1 cup diced celery
1 tablespoon minced garlic
1 tablespoon chili powder
1 tablespoon ground cumin
3/4 tablespoon black pepper
3/4 tablespoon dried basil
3/4 tablespoon dried oregano
32 ounce Black Beans
6 ounce Tomato Products
1/2 cup hot sauce

Recipe Directions for Vegetarian Chili

  1. Heat the oil, and combine all the ingredients from part one. Cook until the onions start to sweat, about two minutes or so.

  2. Then, combine all the ingredients from part two. Be certain to include all the liquid from the tomatoes and black beans, as this is the liquid in this chili recipe.

  3. Bring to a rolling boil, reduce heat, and simmer for 2+ hours. Stir often.

  4. The veggies in this chili can be substituted out with whatever you have on hand, as can the beans for whatever you prefer. Up the heat by adding extra chili powder or a hotter hot sauce. If you really want a ton of heat add green chilies or jalapenos.
