Food Network Emeril's Vegetarian Chili with some modifications!

Recipe Ingredients for Vegetarian Chili Emeril

1.5 cup Black Beans, Organic
0.75 cup Pinto Beans, Organic
1.5 cup, chopped Peppers, Sweet, Red
2 pepper Pepper, Serrano
1 cup, chopped Squash, Summer, Zucchini, Includes Skin
0.5 cup, sliced Squash, Summer, Crookneck And Straightneck
1 clove Garlic
1 cup, chopped Onions
2 cup Corn, Sweet, Yellow
1 tbsp Chili Powder
4 tsp Cumin
1.25 tsp Salt, Table
2 cup Original Diced Tomatoes
8 oz Tomatoes Diced with Green Chilies
0.5 cup Tomato Sauce
2 tbsp Extra Virgin Olive Oil

Recipe Directions for Vegetarian Chili Emeril

  1. In a large, heavy pot, heat the oil over medium-high heat. Add the onions, bell peppers, garlic, and serrano peppers, and cook, stirring, until soft, about 3 minutes. Add the zucchini, corn, and cook, stirring, until soft and the vegetables give off their liquid and start to brown around the edges, about 6 minutes. Add the chili powder, cumin, salt and cayenne, and cook, stirring, until fragrant, about 30 seconds. Add the tomatoes and stir well. Add the beans, tomato sauce, and vegetable stock, stir well, and bring to a boil. Reduce the heat to medium-low and simmer, stirring occasionally, for about 20 minutes.

  2. Remove from the heat and stir in the cilantro. Adjust the seasoning, to taste.
