This is a complete protein as it combines meat and rice. The corn is not necessary, but it makes it pretty and more kid friendly. If you are watching the calories, cut out the corn and add more vegetables.

Recipe Ingredients for Vegetarian Chili - Corn and Rice

5 ounce kidney beans
5 ounce kidney beans
5 ounce black beans
10 ounce corn, cooked
4 ounce rice, brown
21 ounces tomato sauce
3 medium onions, chopped
3 red bell peppers, chopped
5 roma tomatoes, chopped
3 tablespoons chili powder
12 ounce water

Recipe Directions for Vegetarian Chili - Corn and Rice

  1. Instead of dried beans, you can use one 17 oz.540 ml can of red kidney beans, one can of white kidney beans, and one can on black beans.

  2. Otherwise, soak beans overnight and drain.

  3. Drain fluids off canned beans/corn and rinse.

  4. In large pot, combine all ingredients.

  5. Similar on medium low until rice and beans are fully cooked (about 90 minutes depending on kind of rice)
