A simple bean chili with spices and cheese.

Recipe Ingredients for Vegetarian Chili con Queso

900 g kidney beans, drained and rinsed (2 cans)
900 g tomatoes, whole canned (2 cans)
2 cloves garlic, minced
1 onion, chopped
2 bell peppers, chopped
1 tsp cumin
1 T chili powder
1 cup water, as needed
120 g cheddar cheese, grated

Recipe Directions for Vegetarian Chili con Queso

  1. In a large saucepan, saute the garlic, onion and green pepper.

  2. Add the cumin, chili powder and drained beans.

  3. Crush the tomatoes through your fingers as you add them.

  4. Pour in the tomato juice from the cans.

  5. Simmer for at least 30 minutes.

  6. If needed, add water to adjust consistency.

  7. Serve with grated cheese on top.
