Recipe Ingredients for Vegetarian Chickpea Stew

2 cup Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds
28 oz Diced Tomatoes, No Salt Added
0.333 cup Lentils, Mature Seeds
1 medium raw Onion Yellow
1 tbsp Olive Oil
5 stalk, medium (7-1/2" - 8" long) Celery
1 cup Organic Vegetable Cooking Stock

Recipe Directions for Vegetarian Chickpea Stew

Dice onion and celery. In a large saucepan, saute onion and celery until soft. Add tomatoes and stock, as well as spices (one cinnamon stick, two bay leaves, four or five cloves, a tablespoon or two of ground cumin, and crushed red pepper to taste). Bring to a boil and let simmer for 30-45 minutes. Add chickpeas and lentils, and simmer until lentils are soft, about 25-30 minutes. Salt and pepper to taste.
