quick recipe, made with chickpeas- i use organic, they have less sodium then CC calculated here *light mayo can also be substituted for the ranch dressing

Recipe Ingredients for vegetarian "chicken" salad

1 cup organic chickpeas
1/4 cup (4 tbsp) kraft fat free ranch dressing
2 slices red onion
1 stalk celery
1 salt and pepper to taste

Recipe Directions for vegetarian "chicken" salad

  1. mash chickpeas in bowl with potato masher

  2. add in ranch dressing, onion, celery, salt and pepper and stir
