Cheesy, warm, kid friendly! A real family meal and tummy pleaser!

Recipe Ingredients for Vegetarian Cheeseburger Pie

3 medium tomatoes
6 cloves garlic
1 red onion
3 medium carrots
2 stalks celery
1 pound tofu
8 ounces cheddar cheese
1 cup lowfat milk
1/2 cup Bisquick
1/2 cup Egg Beaters
1/4 teaspoon pepper

Recipe Directions for Vegetarian Cheeseburger Pie

  1. Heat oven to 400 degrees.

  2. Take first five ingredients (all veggies) and chop them finely in a food processor.

  3. Saute on medium heat about 5 minutes.

  4. Add ground soy and heat through, then add soy mixture to a greased round dish - I use Pam. (Note: I had to put "tofu" in the ingredients so Calorie Count would process the info. but I actually use ground soy crumbles.)

  5. Grate cheese, then sprinkle on top of the soy mixture in the round dish.

  6. In a separate bowl, mix together milk, Bisquick, Egg beaters, and pepper, then pour this mix on top of the cheese and soy in the round dish.

  7. Bake 25-30 minutes until knife inserted in the middle comes out mostly clean. If knife comes out clean, that's ok, but a "mostly clean" knife makes for a cheesier dish and leftovers won't dry out as quickly.

  8. Enjoy with roasted butternut squash and a green salad with pears and raspberry vinaigrette.
