Recipe Ingredients for Vegetarian Cheeseburger Macaroni

2 cups Smart Ground
16 oz Diced Tomatoes
1/2 cup Onion
1/2 cup Corn
1 clove Garlic
1 1/2 cups Water
1 cup Macaroni, Whole-Wheat
2 tablespoons Butter
2 tablespoons Flour
3/4 cup Original Soy Milk
3/4 cup Cheddar Cheese, Shredded
1/4 cup Mozzarella Cheese, Shredded
1 tsp Cayenne Pepper
2 tsp Chili Powder
1/2 tsp Oregano
1/2 tsp Paprika
1 tsp Cumin
1/2 tsp Black Pepper
1/2 tsp Salt

Recipe Directions for Vegetarian Cheeseburger Macaroni

  1. Cook Smart Ground as directed in skillet with Onion and Garlic.

  2. Stir in All Seasonings and Herbs, Diced Tomatoes, Corn, Water, and macaroni.

  3. Heat to boiling.

  4. Reduce heat and cover pan. Simmer 12-14 mins until macaroni is tender.

  5. Meanwhile, make cheese sauce. Melt the butter in a saucepan.

  6. Whisk in the flour and cook, whisking for 5 minutes until fragrant and light brown in color.

  7. Whisk in the milk and bring to a boil. Whisk until smooth and thickened.

  8. Remove from heat and stir in the shredded cheese until melted.

  9. Add salt and pepper to taste to the cheese sauce. Pour the cheese sauce over the Macaroni and Protein mixture. Stir gently to combine.
