A hearty, tasty, veggie casserole. I add some vegetarian sausages for added texture and protein.

Recipe Ingredients for Vegetarian Cheese-Topped Casserole

1 tbsp olive oil
1 onion
15 g garlic
1 zuchinni
1 yellow pepper
400 g canned tomatoes
90 g self raising flour
30 g vegetable suet
1/2 tsp salt
60 g cheese

Recipe Directions for Vegetarian Cheese-Topped Casserole

  1. Pre-heat the oven to 200c/400f.

  2. Heat the oil, fry the onion, garlic, zuchinni and pepper (and sausages if using) until starting to brown.

  3. Add the tomatoes and some seasoning (i add some smoked paprika and mixed dried herbs). Simmer for about 10 minutes.

  4. Meanwhile combine the flour, suet, salt and cheese together in a bowl. Add 5 tablespoons water and mix to form a dough.

  5. Put the casserole in an ovenproof dish. roll out the dough and place on top of the casserole, pressing the edges to the side of the dish.

  6. Bake in the oven for 25 minutes until the topping is golden brown and puffy.
