Vegetarian Cau Cau Recipe

This is a vegetarian adaptation of a traditional Peruvian dish, which is usually made with seafood, tripe, or chicken.

Recipe Ingredients for Vegetarian Cau Cau

2 tbsp Vegetable Oil
1 onion
2 garlic cloves
575 g cauliflower
1 cup White Corn
1/2 cup peas
1/2 cup carrots
2 medium white potatoes
2 vegetable bouillon cubes
3 cup water
1 tbsp turmeric
1 tsp hot sauce
1 tsp mint

Recipe Directions for Vegetarian Cau Cau

  1. Dice onion, carrots, and potatoes. You can use frozen peas and carrots mix.

  2. Cut the cauliflower head into bite-sized pieces

  3. Mince mint leaves

  4. Mince the garlic (or use minced garlic from a jar)

  5. In a large stew pan or dutch oven, brown the onion in the oil until transparent

  6. Add garlic and raw potatoes and cook on medium heat for about 3 minutes

  7. Add the turmeric and mix thoroughly

  8. Add the rest of the vegetables, the water and the bouillon cubes.

  9. Let the mix simmer for 8-10 minutes, or until cauliflower and potatoes are cook through.

  10. Add hot sauce and mint

  11. Stir, and serve over hot rice (brown or white)
