Relatively low - cal spaghetti carbonara - a modification of a recipe in "cook youself thin".

Recipe Ingredients for Vegetarian Carbonara (serves one)

1 small onion
2 oz red leicester cheese
50 g flour
1/2 egg, raw
1 egg yolk
1 pinch of salt
1 pinch of black pepper
1/2 clove of garlic
1/2 tsp dried mixed herbs

Recipe Directions for Vegetarian Carbonara (serves one)

  1. Finely chop the onion and garlic, and add to a deep frying pan with 150ml of water, and bring to the boil. Lower the heat, then cook for 5 minutes, or until they are soft, and the water has evaporated.

  2. In a large bowl, combine the plain flour with the egg until they form a dough. If it is too dry, add water - the dough should be firm but soft, and not too sticky.

  3. Roll the dough out very thinly, and slice into strips to make linguine. Boil some water, add the strips and leave to simmer gently.

  4. Now mix the egg yolks, cheese and herbs together in a bowl or mug.

  5. By now, the pasta should be almost ready. When it is cooked, drain it but reserve some of the cooking water.

  6. Mix the pasta, egg yolk mixture, onions & garlic and cooking water together.

  7. Season with salt and pepper and serve! (Salad or peas go really well with this dish.)
