Vegetarian Cabbage Rolls Recipe

Vegetable and rice cabbage rolls baked with tomato sauce.

Recipe Ingredients for Vegetarian cabbage rolls

1/4 head savoy cabbage
1 tbsp olive oil
3 cloves garlic
28 ounce tomato puree
1 egg
2 cups brown rice
3 large carrots
3 celery stalks
1/2 cup reduced fat feta

Recipe Directions for Vegetarian cabbage rolls

  1. bring a large pot of slated water to a boil

  2. meanwhile heat another sauce pan over medium high heat, add the oil and quickly saute the garlic, don't try to caramelize it just a quick saute and then add the tomatoes

  3. reduce heat and simmer until needed

  4. when the water boils set the cabbage in it and gently turn over and over until the outer leaves are soft

  5. remove the outer leaves that have softened up, probably at least 4

  6. then put it back in the water repeat until you have 8 large wrapper leaves

  7. reserve the rest of the cabbage for a quick oriental coleslaw or something else

  8. with a sharp knife shave off any thick stems so they don't break your rolls

  9. mix the remaining ingredients together, tossing gently to combine

  10. lay a leaf flat on your work surface, lay 1/12 of the filling in the center and fold the left and right sides over

  11. fold the side closes to you over and roll on up

  12. repeat 11 more times

  13. place each roll in a 9x13 pan

  14. cover with the tomato sauce

  15. cover with foil and bake for 45 minutes

  16. serve hot for best taste but they do taste good the next day too, think so any way I didn't get one
