This tasty, protein packed casserole is layered with savory sauteed vegetables and tofu between layers of tender cabbage.

Recipe Ingredients for Vegetarian Cabbage Casserole

1 1/2 lb green cabbage, shredded
1 tbsp olive oil
1/2 cup onion, finely chopped
1 lb mushrooms, sliced
6 oz baby spinach leaves, cut into slices
1 tbsp italian seasoning
1 tbsp garlic, finely chopped
16 oz silken tofu
2 large eggs, beaten
28 g (1/4 cup/1 oz) shredded parmasan/romano/asiago cheese blend
1/2 tsp ground pepper
1/4 tsp fresh ground nutmeg
26 oz marinara sauce
84 g (1 cup/4 oz) fat free mozarella, shredded

Recipe Directions for Vegetarian Cabbage Casserole

  1. Core the cabbage by cutting cabbage off each side. Lay the pieces of cabbage on it's side and thinly slice (shred). Place cabbage in a microwavale bowl and sprinkle with cold water (not too much, just enough to produce steam). Cover the bowl and microwave for 4 to 5 minutes or until cabbage is wilted; turning bowl twice.

  2. Preheat oven to 350 F. Coat a 9x13 pan with cooking spray.

  3. In a large non-stick skillet over medium-hi heat, warm the olive oil. Add the onion and mushrooms. Tos to coat. Cover an cook for 5 minutes or until the liquid pools in the pan. Uncover and cook for about 4 minutes or until the liquid has evaporated. Add spinach, garlic and italian seasoning. Cook, stirring, for about 2 minutes or until the spinach is wilted.

  4. In a bowl, combine the tofu, eggs, parmesan cheese mix, pepper and nutmeg. Stir or beat with an electric mixer to completely blend. Coat the bottom of the pan with 1/4 cup of marinara sauce. Layer 1/3 of the cabbage, 1/2 of the tofu mixture and 1/2 of the mushrooms mixture and about 2/3 cup of sauce. Top with 1/3 of cabbage, other 1/2 of tofu mixture, other 1/2 of mushroom mixture and 2/3 cup of sauce. Cover with remaining 1/3 of lettuce, rest of marinara sauce. Sprinkle with mozerella cheese.

  5. Bake for 30 minutes or until bubbly and cheese is golden.
