A great vegetarian alternative for Mexican food.

Recipe Ingredients for Vegetarian Burritos

12 whole wheat tortillas
2 lbs sweet potatoes
8 oz kidney beans
1 tbs fajita seasoning
600 grams tofu
300 grams shredded light cheese

Recipe Directions for Vegetarian Burritos

  1. Steam the sweet potatoes in the micorwave until very tender.

  2. Scoop out the flesh and mash until smooth.

  3. Crumble the tofu in and mix well.

  4. Drain & rinse the kidney beans.

  5. Add to the potato & tofu mix and mash only until chunky.

  6. Heat the torillas until pliable.

  7. Sprinkle a tablespoon of the shredded cheese along the first half of the torilla.

  8. Add 1/12th of the potato mix along the top, and sprinkle with a little more of the cheese.

  9. Roll up into a tube and lay in a rectangular casserole dish.

  10. Bake in a 350 deg oven for 15-20 minutes.

  11. Serve with a crispy green salad, or slices of avocado.
