Not as low fat as I would hope. Could go lighter on the cheese. But they sure taste nice!

Recipe Ingredients for Vegetarian Burritos

1 medium zuccini, sliced and quartered
1/4 large green bell pepper, chopped
1 pepper, jalapeno, chopped
1 small onion, chopped
3 tablespoons Chilli Powder
2 tablespoons Cumin
1/2 teaspoon black pepper
2 tablespoons Extra Virgin Olive Oil
2 cups Cheese, Colby Jack, shredded
4 ounce diced green chiles, hot
15 1/2 ounce black beans
4 Tortilla, Burrito 10" Flour tortillas 14ct

Recipe Directions for Vegetarian Burritos

  1. Preheat oven to 425 degrees.

  2. Heat oil in pain on medium/high heat.

  3. Add zuccini, jalapeno, bell pepper and onion.

  4. Cook until onion is translucent.

  5. Add cumin, chilli powder, and black pepper.

  6. Add Green chiles.

  7. Cook for 5 minutes.

  8. Warm Tortillas.

  9. Spoon 1/4 of the veggie mixture, black beans and cheese on 1 of the tortillas.

  10. Roll into a burrito.

  11. Place into 9x13 baking dish.

  12. Repeat 3 times.

  13. Place in oven and bake 12-15 minutes.
