All my favorite veggies mixed into a whole wheat shell

Recipe Ingredients for Vegetarian burrito mix

1 1/2 cup sweet potato
1/2 cup onion
1/2 cup red pepper
1 tbls garlic
1 cup kale
1 3/4 cup black beans
1/2 cup avocado
2 tbls lite sour cream
1/2 cup asparagus

Recipe Directions for Vegetarian burrito mix

  1. Fry small chopped sweet potatoes in olive oil.

  2. When they are mostly cooked add chopped peppers and chopped onions.

  3. Next add chopped asparagus and minced garlic.

  4. Then add whole can of drained black beans and chopped kale, cover to steam kale and stir frequently.

  5. Chop avocado, mash, mix with sour cream.

  6. Throw it all in a tortilla.
