Breakfast Casserole I made for Marathon Monday Brunch

Recipe Ingredients for Vegetarian Breakfast Casserole

8 slices whole wheat bread
3 tbsp Brummel & Brown Spread
8 eggs
1 cup half-and-half
8 cups baby spinach
2 cups Marinated Artichoke Hearts Antipasto
6 oz goat cheese
1/2 onion
4 green onions
1 tsp salt
1 tsp ground black pepper

Recipe Directions for Vegetarian Breakfast Casserole

  1. Sautee Onions and Green Onions

  2. Add Spinach until slightly wilted

  3. butter a baking dish; lay bread over bottom of dish

  4. arrange onion/spinach mixture, artichoke hearts and goat cheese over top.

  5. Whisk eggs and half-and-half together with salt and pepper.

  6. Pour egg mixture over dish.

  7. Bake at 350 degrees F for 25-30 Minutes
