Recipe Ingredients for vegetarian bolognese

500 g pasta, dry
200 g soya mince, dry
2 carrots
400 g tomatoes
600 ml hot water
1 onion
2 tbs oil
30 ml wine
1 tsp basil, dried

Recipe Directions for vegetarian bolognese

  1. Fry onions and grated carrots.

  2. Add chopped tomatoes (or use 1 can) and simmer for a few minutes.

  3. Sift out some of the flavouring of the soya mince, and add the remaining mince to the pot.

  4. Stir thoroughly, add water, basil and a few slices of lemon rind, and stir again.

  5. Simmer until almost cooked.

  6. Add wine.

  7. Cook until mince is soft and cooked through. If necessary, add a bit more water.

  8. Meanwhile, cook pasta according to pack instructions.

  9. Mix mince and pasta, and serve topped with grated cheese.
