Recipe Ingredients for Vegetarian Beef Stew

15 oz Beans, Kidney, All Types, Mature Seeds, Canned
6 potato small (1-3/4" to 2-1/2" dia) Potatoes, Red, Flesh And Skin, Baked
2 cup flowerets Broccoli, Flower Clusters
1/2 cup slices Carrots
2 stalk, medium (7-1/2" - 8" long) Celery
6 piece whole Mushrooms, Brown, Italian, Or Crimini
1 cup Diced Tomatoes
32 oz Beef Broth
1 cube (6 fl oz prepared) Soup, Beef Broth, Cubed, Dry
1 onion Yellow Onion
1 tbsp Olive Oil

Recipe Directions for Vegetarian Beef Stew

Chop all to liking, sautee in olive oil until softish, add kidney beans and tomatoes/greenchili, cover with beef broth. Bring to a boil and then turn down and simmer for about 20-30 minutes until veggies are tender.
